The process

We begin by selecting the best fruit: healthy, homogeneous and in the perfect state of ripeness.

Then we peel the fruit by hand, with care, without damaging the product. No machine can surpass the quality of this natural and traditional production process.

Once peeled, we apply the best way to cook fruit: fast cooking. A strong fire evaporates the juice and then a moderate fire helps the mixture to thicken.

We then perform the bottling process without damaging the product.

Subsequently all jars are vacuum seal and sterilized in boiling water bath for several minutes.

Finally, we label the final product, a process which is also done by hand.

At La Artesana, the entire production process is performed without interruption to maintain the aroma and colour of the fruit.
